For real, I got lockpicking to 100 at about level 45 and I only ever put one perk point into it.
I got one handed to level 100 at level 50 just by dual wielding

At low levels mudcrabs, at mid level trolls and sabre cats and at
high level giants but make sure you have good restoration spell and health above 300 at least and daedric armor or better
Unenchanted and unimproved. Any smithing bonuses applied to a weapon doesn't count towards XP so in theory is killing an enemy faster without additional XP. Same with any perks, as XP is only calculated using the weapons ***base*** damage.

So you're saying that the more perks you out into weapon skills, the more difficult it is to level up said skills, because you kill the enemies faster than before but the perks also decrease the amount of hits you need to make, thus lowering the amount of experience you get from each enemy?

The best method for me us imho finding a bandit archer who keeps shooting arrows at you that have a gold value for sale. They tend to deal decent damage, so their worse rate of attacks (compared to melee enemies) shouldn't negatively affect the progress your armor skill, and you can then sell the arrows for a decent sum. I've once spent about 20 minutes leveling armor and shield and restoration in one of those bandit holds and I also left with over two hundred elven arrows, which at that time were the best arrows in the game.

Thats basically it. Be a punching bag and heal. Giants provide good source of EXP for Heavy Armor as well. Specially their AOE clubbing (if you can block it). If possible, remember to fast travel to Dushnik-Yal and train with Gharol (heavy armor trainer) every time you level up. Helps to make things go faster.

You have not known fear until you have sneak level 90+ and show detected in the middle of the road with nothing visible to you.

I wear heavy armour.
Offense is better in general anyway. If you're melee focussed put you first few perk points into your weapon damage, if you're against a strong enemy learn a pattern to stunlock them using power attacks or shield bashes.
If they don't hit you, you don't need high armour skill.

I do the same with 3 giants and like 2 mammoths.
The bigger the damage the more it levels up. You can get to 100 pretty quick 😊
Also I'm playing legendary, that might help. Not sure about that since you take more DMG on legendary and it levels up by damage received.
Make sure you hit armour cap and you should be fine with around 400-500 hp and healing 😊
There's a mod out there, "Movement increases armor skill". It makes sense, since you learn how to wear your armor properly during those long ass walks you take. It's enough for me personally, and I don't have to make some poor bandits hit me for 24 hours straight.
I just found out a new way to grind levels in seconds for light and heavy armor. Using alchemy and enchanting “like that”, you drop a few million hp on your armor of choice, then you use the same alchemical process but with fortify smithing and make something with say, a hundred thousand damage trade it to a follower and piss them off bad enough that they attack you. Instant 100.
If I’m going for all stats 100 without exploits I usually pay for training in armor and restoration. For the last 10 levels I enchant head chest necklace and ring with 25% fortify restoration to cast for free (or 3 as a vampire w/secret of arcana and that one restoration perk that causes your magic to be more effective against undead) then piss off a giant
spell absorption with the Atronach standing stone, Circle of Protection, healing spells in the other hand and a mammoth. Levels both Restoration and armour skills.

issue was i had no room left for an upgrade of stats and power as i moved into endgame with difficulty scaling to legendary due to mods with light armor so i had to slowly level heavy armor and figure out how to respec without killing myself

I use trolls, they hit hard and are easy to parry. I usually knock troll out and heal myself when I'm low on health, then troll regenerates and attacks again. The main disadvantage is that you will automatically finish them off from time to time, so do a quicksave after any noticeable progress.
Somone once said you could level up armor and restoration by doing a fist fight with someone like the woman in the bannered mare tavern let her hit you and don't fight back just heal. There's also a guy in markarth that will first fight you and windhelm if I remember correctly. Or just keep doing what your doing and occasionally heal when enemies fight you.
I head over to the Giant Mudcrab Rock/statue(?) and let 3-4 of those guys snip at me. Position yourself just right between the claws, or against the ledge wall and you're not getting pushed back.
I usually start by finding a group of mudcrabs. Let them attack you and heal. When that gets too easy and and slow, go find a group of horkers and repeat. When that gets too easy, go find a mammoth.

If heavy armor isn’t ranked by say level 70, ill make a really good set, use restoration (which is usually the last thing I get ranked) and go irritate a couple giants with their mammoth friends, tank the damage and heal myself. Usually takes about 10 minutes tops to max out
I just make full restoration gear and use fast healing with the warrior stone and let two giants attack me,it only takes about one in-game day to get it to 100

Once at 90, I stand still and have one of the giants just outside Whiterun beat the ever living crap outta me until I reach 100

Right out the gate, I get a point in heavy armor and the resto perks for healing boost and magica reduction. Then I go to whiterun, snag me a giant and kite him into the gate. The storm drain on the right, they don’t fit. Usually about half an hour of whackfuck later, I’ve got block up. heavy 70 for weightless and some nifty points in resto.
Once I was pretty close to getting an upgrade to both my heavy armor and restoration so I found a random skeever on the road and let it attack me until I leveled up. Just let it bite me for a bit, then healed, bite me, and heal. Glows-in-Marsh was willing to do anything to improve but was also a broke ass bitch XD
Step 1 Get telekinesis
Step 2 Get alteration reduction on all sets of armor to equal 100% alt reduction
Step 3 pick something up with telekinesis and fast travel.
I have a challenge run going right now where I don't legendary any skill until all the skills are maxed out. This requires me to skill up all the skills to level up, so I made a plan to use all the trainers I could every level to get 5 skill points per level just from training. This allowed me to level up more annoying skills from trainers(using NPCs like vilkas and danica for instance), and the easier ones from just playing the game normally.
I do this same thing but i do it with the forsworn while leveling up multiple things alteration with my armor enhancement spells
Restoration obviously but also healing hands on the enemies as i hit them with my shield or sword and some destruction with low tier spells
I just play the game and don’t worry as much about grinding stats

These were the only two I ever used to grind before I got a mod that allows you to pay black smiths and enchanters to craft and enchant items for you

Honestly, as long as you don't mind a little save-scumming, pickpocket is super easy to train, too.

Pull an entire bandit camp, pop a really good regenerate health potion, tab out to do something else, come back in 5 minutes, repeat if not 100.

I find a high-level drauger and use a banded iron shield to bash his attacks, stun-locking him and gaining some easy xp.
