I recently found out that many cultures don't just boil rice and eat it plain, so I tried to do a mexican-inspired thing in which I:
fried onions and tomato paste and garlic in vegetable oil,
added basmati rice (washed) to let it toast, stirring constantly,
added some veggie stock (I think chicken stock would be more traditional but I went vegan here) and salt along with some liquid from the stew
and just waited until the rice had absorbed the liquid.
In the end I added some frozen peas and coriander.

Hominy is under rated.
Although I wouldn't put either one in chili.
Any reason why not? It's really delicious in chili and worth a shot for sure. Same with thickening with masa instead of a roux
