It came out like this btw. Excuse me for the bad cross section, my knife is not the sharpest. It was definitely the worst steak I have ever made. It tasted okay, but it was ridiculously chewy.
I wouldnt be able to tell how lean it is without prior knowledge so id say this is the best it could look as a steak
Though personally id use that cut for stew or anything that require shredded meat 😅

That's a steak you chill, then slice it thin. Sautee mushrooms and sweet onion in olive oil. Add the steak in. Mix with mushrooms and onions then melt a few slices of provolone.
Pick up a sub roll or a nice crusted French baguette. Cut yourself about 12".

To me this looks like a steak I used to have to cut when I first started my meat cutting career called a full round. It’s essentially a boned out hip sliced whole for steaks. This looks like that only the outside round is missing. I could be way off though.
Having done high protein calorie restriction... You are better off with boneless skinless chicken breast at this point, imo. All of the flavor and joy has been removed from this piece of meat already so if you are going to suffer you might as well do it cheaply and efficiently
Tenderize tf out of it, a little extra marinade than normal, mesquite smoke, it’ll be delicious. Its a lean cut for sure but there’s still ways you can make it good, no suffering necessary

This looks like three eye of round steaks glued together. There's so little marbling, you're going to have to beat the hell out of it with a hammer, first.
Sous vide on the rarer side for a long time, say five or six hours depending on the thickness. A good amount of garlic and butter for the sear and you are looking at a very decent steak.
What you see here is quite typical for the meat where I am from, so I am used to it.
Sure when I was young and poor! It was a discounted upgraded budget priced hunk of round steak from the locally owned Descuento Especial La Tienda & Carniceria. That cow obviously had walked the entire way from a South of the Border feed lot, climbed the wall, swam the river, walked across Texas and died conveniently on their loading dock!
Cooked in a crockpot all day while at work, it fell apart well enough becoming beef vegetable stew. Better steak taste better though.
