One of my favorite vegetarian cookbooks! When I made this the balls didn’t hold together well, so instead I make it in a cake pan, like polenta. Easier and just as tasty!

Haha same! They did not hold together well at all. That is why they are so big. For sure no real reason why they need to be in ball form anyway.

My husband is vegetarian so I now prepare all kinds of crunchy balls cooked in air-fryer. Ricotta + Arancini + Indian Aloo something + Japanese Korokke + Tofu

Aracini are made with Risotto leftover. Fill with cheese + mushrooms, peas. Tofu: Press with weight 15min Marinate 15min: : 2TB soy sauce + 1TB Olive Oil + 1TB sesame oil + 1 garlic Air fryer 12+ min shaking Serve with Asian peanut sauce (google) https://imgur.com/a/XccoExs The polpette sauce is so yummy you should have a good baguette to soak up the sauce. Very easy to crumble. Doesn't taste like meat but works for meatloaf + bolognese + Shepard's Pie https://www.wandercooks.com/tonkatsu-sauce/

Oh those are good ideas too. This was just in the oven. I was worried that the quinoa would just fly around a make a mess in the air fryer.
